A new dining experience has opened in Calgary, and earlier this week I was invited in to take a taste!
Named partially as an homage to the beloved feral rabbits thriving in its Bridgelands location, this is Elwood & the Rabbit.
Located in the former home of Whitehall, not a lot has changed when it comes to its interior but when it comes to the menu, it’s a whole new look.
Elwood & the Rabbit, under direction of Chef Dylan Draper, will focus on “utilizing the bounty that exists in Alberta” and as a believer in ‘head to tail’ – Chef will focus on using all parts of whole animals as an ethical means to creating his menu.
And the menu will be varied and plentiful – including snacks, small plates, large plates and sides during its dinner service.
In addition Elwood & the Rabbit will also offer up a weekend brunch containing crowd favourites with unusual twists like Kimchi Benedict and Savoury Steelhead Trout Pancakes.
Now back to dinner chatter since that’s what I was there for – here’s what I was served:
Beets & Buttermilk (small plate) $14.53
Chewy sticky beets, beet pudding, sumac and beet ciccarone, rye fennel crumb, coriander, buttermilk espuma.
Cured Steelhead Trout (small plate) $16.33
Octopus chassu, basil pressed cucumber, black tuile.
Pork Belly & Roast (large plate) $25.31
Cheesy brussel leaves, truffle honey, sherry jus.
Served with a side of;
Kimchi Potato Salad $6.01
This upscale meal was not only an interesting palate pleaser but also a visual feast for the eyes.
But it’s not all frou frou…
For the diner (like myself) who typically sticks with all accoutrements that they can pronounce, the menu is completed with an assortment of Artisan Bread ($4.20) as a started and a Dry Aged Cheeseburger ($18.14) with classic toppings as a main.
